Biocatalyst reactor and corresponding processing method applicable in particular in the malolactic transformation of wine

Reactor for continuously processing a substance incorporating a substrate chemically transformable into at least one product, and process capable of being carried out by said reactor. The reactor comprises a chamber (1) and at least one semi-permeable membrane (2) arranged in the chamber (1), separating the latter into at least two sections, a primary section (6) and a secondary section (7), said membrane (2) comprising a material capable of being chemically grafted, and two circuits associated with said chamber, incorporating respectively a primary and a secondary section, one of the enzymatic circuits (8) being for the retention of an 'enzymatic system', comprising at least one enzyme and one coenzyme which catalyses the chemical transformation of the substrate, with a liquid medium flowing in said circuit, and the other of the processing circuits (14) being for the flow of the substance to be processed. The semi-permeable membrane (2) is electrically neutral with respect to the substrate and the product, enabling them to be transferred from one section to another. Reactor and process, in particular for use in the malolactic fermentation of beverage juices such as wine and cider. (FR)Réacteur pour le traitement en continu d'une matière comportant un substrat transformable chimiquement en au moins un produit, et procédé pouvant être mis en ÷uvre par ce réacteur. Le réacteur comprend une enceinte (1) et au moins une membrane semi-perméable (2) disposée dans l'enceinte (1), séparant cette dernière en au moins deux compartiments, l'un dit primaire (6) et l'autre dit secondaire (7), ladite membrane (2) comprenant un matériau greffable chimiquement, deux circuits associés à ladite enceinte, incorporant respectivement undit compartiment primaire et undit compartiment secondaire, l'un des circuits (8) dit enzymatique étant affecté à la rétention d'un 'système enzymatique' de catalyse de la transformation chimique du substrat, comprenant au moins un enzyme et un coenzyme, avec circulation d'un milieu liquide dans ledit circuit, et l'autre des circuits (14) dit de traitement étant affecté à la circulation de la matière à traiter. La membrane semi-perméable (2) est électriquement neutre vis-à-vis du substrat et du produit, permettant leur transfert respectif d'un compartiment à l'autre. Réacteur et procédé notamment mis en ÷uvre pour la fermentation malolactique de jus alimentaire tel que le vin et le cidre.
